KLAAR Fruchtfermente is a young, innovative company specializing in the production of modern interpretations of ciders and fruit wines. Founded in Hamburg in 2019, production has taken place at the Kneese fruit manufactory on Lake Schaalsee in Mecklenburg-Western Pomerania since 2021.

KLAAR's philosophy is based on meticulous craftsmanship, joy, and dedication. Only organic fruit varieties from the Altes Land region are used to create vibrant and distinctive beverages. KLAAR combines techniques from winemaking, brewing, and traditional cider production to create unique Pet Nat ciders and fruit wines.

KLAAR relies on natural processes and consciously avoids filtration, fining, and artificial additives. This results in authentic beverages with expressive aromas and unique flavor profiles.

The range includes various cider varieties, among them single-varietal apple ciders as well as blends with pear or quince. Innovative products like "Pomquette"—a light drink made from apple pomace, refined with elderflower, plum, or rose—offer an exciting alternative. KLAAR also develops high-quality, non-alcoholic, fruit-based alternatives, which are enhanced with additional flavorings.

In close collaboration with the Kneese cider mill and partner companies within the Kneese pome fruit manufactory, KLAAR promotes a sustainable and regional value chain. The company is certified organic and a member of "Die Gemeinschaft eV," an organization for a new food culture and a food revolution.
