Martin Hirsch represents a style of viticulture characterized by deep respect for nature and a clear philosophy of minimal intervention. At the Römerhof estate in Lower Franconia, he cultivates two hectares of vineyards on limestone soils and produces wines that impress with their authenticity and expressiveness.

As a career changer, Martin found his way back to his parents' farm during the Corona crisis and decided to convert the operation to organic viticulture. Inspired by his experiences in fine dining and a formative internship at the biodynamic Franz Weninger winery in Burgenland, he developed his vision of winemaking: in harmony with nature, with great care for the vines and minimal intervention in the cellar.

“With my hands in the soil and my heart in every bottle, I try to bring the beauty of the vineyard to life in every glass of my natural wines,” Martin describes his approach. This dedication is evident in wines like the “Plateau 2022,” which are unsulfured, unfiltered, and aged on the lees.

His intuitive and artisanal approach combines traditional methods with modern natural winemaking principles. Supported by a local community that shares knowledge and resources, Martin demonstrates that small wineries with passion and creativity can create exceptional wines.

The Römerhof estate is intended to serve not only as a winery, but also as a place for permaculture, sustainable projects, and encounters. With each vintage, Martin Hirsch proves that winemaking with respect for nature and dedication can lead to impressive quality.
