Jakob Kulosa, founder of Zarathustra Wine, took a bold step in his mid-30s and retrained as a winemaker in 2017. Even during his apprenticeship, he began cultivating his own vineyards and started experimenting with sparkling wine production in 2018. Finally, in 2021, he released his first vintage under the Zarathustra Wine label – a testament to his determination and passion for handcrafted wines.

Jakob Kulosa embraces minimalism in both the vineyard and the cellar. Through meticulous handcrafting and the avoidance of additives, he creates sparkling wines that authentically reflect the terroir and the characteristics of the fruit used. Traditional methods and sustainable approaches define his work – from spontaneous fermentation to bottling without fining agents.

At the heart of the portfolio is the classic sparkling wine. The base wine undergoes spontaneous fermentation and matures for 12 months on the lees before being blended with the fermenting must from the following year. This method lends the wines depth, structure, and an unmistakable elegance.

Another important component is the apple sparkling wine, called Zidre. This is produced according to the same principles as classic sparkling wines: with long barrel aging and spontaneous fermentation. The apples come from unused orchards in the Saale-Unstrut region, which contributes to the preservation of the cultural landscape and the promotion of biodiversity. This focus on regionality and sustainability is reflected in the care with which both the apple sparkling wines and the grape wines are produced.

With his clear focus on craftsmanship, minimalism, and respectful use of natural resources, he demonstrates that bold decisions and dedication can produce exceptional results. His wines stand for honesty, regionality, and artisanal perfection.
